Cameroon Pepper Soup

A fiery, fragrant clear broth of goat meat or fish simmered with a unique Cameroonian spice blend that warms the body and clears the sinuses.

Ingredients

  • 1kg goat meat, cut into pieces
  • 2 scotch bonnet peppers
  • 1 large onion, chopped
  • 2 tbsp njangsa (Ricinodendron) seeds, ground
  • 1 tsp country onion (djanssang), ground
  • 1 tsp white pepper
  • 4 cloves garlic
  • 1 thumb ginger, sliced
  • 2 bouillon cubes
  • Salt to taste
  • 1.5L water
  • Fresh basil leaves

Instructions

  1. 1 Season goat meat with salt and place in a large pot with chopped onion, garlic, and ginger. Add water and bring to a boil.
  2. 2 Cook on medium heat for 40 minutes until meat is tender.
  3. 3 Grind njangsa seeds and country onion in a mortar. Add to the pot.
  4. 4 Add scotch bonnet peppers whole, white pepper, and bouillon cubes.
  5. 5 Simmer for 20 minutes, allowing spices to infuse.
  6. 6 Add fresh basil leaves in the last 2 minutes. Serve hot in deep bowls.
