Hibiscus Leaf Drink

A tangy, deep-red chilled drink brewed from dried hibiscus flowers with ginger and sugar, refreshingly tart and a Cameroonian favourite in hot weather.

Ingredients

  • 3 cups dried hibiscus flowers (folere)
  • 1 large piece fresh ginger, sliced
  • 1 cup sugar or to taste
  • 8 whole cloves
  • 2 sticks cinnamon
  • 2L water
  • Fresh mint for garnish
  • Ice for serving

Instructions

  1. 1 Rinse hibiscus flowers thoroughly.
  2. 2 Place flowers in a large pot with ginger, cloves, cinnamon, and water. Bring to a boil.
  3. 3 Simmer for 15 minutes until the liquid is deep red.
  4. 4 Strain through a fine sieve into a pitcher.
  5. 5 Stir in sugar while still warm. Let cool.
  6. 6 Chill in the refrigerator and serve over ice with fresh mint.
