Marinated chunks of beef, chicken, or goat threaded on skewers and grilled over charcoal, basted with a spiced oil and served with pepper sauce.

Ingredients

  • 1kg beef or chicken, cubed
  • 2 large onions, cut into chunks
  • 2 bell peppers, cut into chunks
  • 3 tbsp vegetable oil
  • 2 tbsp ground cameroon pepper
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 2 bouillon cubes, crushed
  • Salt to taste
  • Lime wedges for serving

Instructions

  1. 1 Mix oil, pepper, garlic powder, ginger, crushed bouillon, and salt into a marinade.
  2. 2 Toss meat cubes in the marinade and let sit for 30 minutes.
  3. 3 Thread marinated meat, onion chunks, and bell pepper pieces alternately onto skewers.
  4. 4 Grill over hot charcoal for 12-15 minutes, turning and basting with remaining marinade.
  5. 5 Squeeze lime juice over the finished brochettes.
  6. 6 Serve hot with extra pepper sauce and sliced onions.
