Lemongrass Beef Stir-Fry

Tender beef stir-fried with aromatic kroeung paste, lemongrass, and kaffir lime leaves, a staple of Cambodian home cooking.

Ingredients

  • 500g beef sirloin, thinly sliced
  • 3 tbsp kroeung paste
  • 2 stalks lemongrass, finely sliced
  • 4 kaffir lime leaves, shredded
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp palm sugar
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • Thai basil leaves

Instructions

  1. 1 Heat oil in wok over high heat until smoking.
  2. 2 Add kroeung paste and lemongrass. Stir-fry 1 minute until fragrant.
  3. 3 Add beef slices and stir-fry 2-3 minutes until seared.
  4. 4 Add bell pepper, fish sauce, oyster sauce, and palm sugar. Toss 1 minute.
  5. 5 Finish with kaffir lime leaves and Thai basil. Serve immediately over rice.
