Ingredients
2 cups long-grain rice
1.5 cups red beans, soaked overnight
1 large onion, diced
2 tomatoes, chopped
2 tbsp vegetable oil
1 tsp curry powder
1 tsp salt
4 cups water
Instructions
1Drain soaked beans, place in a pot with fresh water, and boil for thirty minutes until nearly tender but still firm.
2Heat oil in a heavy pot, add diced onion, and cook for five minutes. Add curry powder and stir for one minute.
3Add chopped tomatoes and cook for four minutes until softened into a sauce.
4Drain the par-cooked beans and add to the pot. Add rice and salt, stir to combine everything evenly.
5Add four cups of water, bring to a boil, then reduce heat to very low, cover tightly, and cook for twenty minutes.
6Remove from heat and let steam with the lid on for ten minutes. Fluff gently with a fork and serve.
