A sweet, refreshing millet flour beverage flavored with ginger, lemon, and vanilla, served ice-cold as Burkina Faso's most beloved thirst quencher.
Ingredients
1 cup millet flour
1L cold water
1/2 cup sugar
Juice of 2 limes
1 small piece fresh ginger, grated
1 tsp vanilla extract
Ice for serving
Instructions
1Dissolve millet flour in 2 cups of cold water, stirring to remove lumps.
2Strain through a fine sieve into a pitcher, pressing to extract all liquid.
3Add remaining water, sugar, lime juice, grated ginger, and vanilla.
4Stir vigorously until sugar is dissolved and all flavors are blended.
5Chill in the refrigerator for at least 1 hour.
6Stir well before serving over ice. The flour settles naturally.
