A sweet, refreshing millet flour beverage flavored with ginger, lemon, and vanilla, served ice-cold as Burkina Faso's most beloved thirst quencher.

Ingredients

  • 1 cup millet flour
  • 1L cold water
  • 1/2 cup sugar
  • Juice of 2 limes
  • 1 small piece fresh ginger, grated
  • 1 tsp vanilla extract
  • Ice for serving

Instructions

  1. 1 Dissolve millet flour in 2 cups of cold water, stirring to remove lumps.
  2. 2 Strain through a fine sieve into a pitcher, pressing to extract all liquid.
  3. 3 Add remaining water, sugar, lime juice, grated ginger, and vanilla.
  4. 4 Stir vigorously until sugar is dissolved and all flavors are blended.
  5. 5 Chill in the refrigerator for at least 1 hour.
  6. 6 Stir well before serving over ice. The flour settles naturally.
