Smoked fish simmered in a thick, creamy groundnut paste sauce with tomatoes and okra, a protein-rich everyday favorite across Burkina Faso.

Ingredients

  • 300g smoked fish, deboned
  • 3/4 cup groundnut paste
  • 4 tomatoes, blended
  • 1 large onion, chopped
  • 6 small okra, sliced
  • 2 tbsp vegetable oil
  • 1 tbsp dawadawa
  • 1 habanero pepper
  • 1 Maggi cube
  • Salt to taste
  • 600ml water

Instructions

  1. 1 Heat oil and sauté onion until translucent.
  2. 2 Add blended tomatoes and cook 10 minutes until reduced.
  3. 3 Dissolve groundnut paste in 1 cup warm water and add to the pot.
  4. 4 Add remaining water, dawadawa, habanero, and Maggi cube. Stir well.
  5. 5 Add smoked fish pieces and simmer 15 minutes.
  6. 6 Add sliced okra and cook 10 more minutes until sauce is thick. Serve over rice or tô.
