Thin, crispy millet flour pancakes fried in a little oil, eaten as a breakfast staple or snack throughout Burkina Faso.

Ingredients

  • 2 cups millet flour
  • 1 cup water
  • 1 small onion, finely diced
  • 1 tsp salt
  • 2 tbsp vegetable oil for frying
  • 1 pinch cayenne pepper (optional)

Instructions

  1. 1 Mix millet flour with water gradually until a smooth, pourable batter forms.
  2. 2 Stir in diced onion, salt, and cayenne if using.
  3. 3 Heat a flat frying pan with a thin layer of oil over medium heat.
  4. 4 Pour a ladleful of batter and spread into a thin round pancake.
  5. 5 Cook 2-3 minutes per side until golden and crispy at the edges.
  6. 6 Stack and serve warm with bouille or tea.
