A refreshing chilled dessert of sweetened yogurt studded with small millet couscous granules, lightly flavored with vanilla and nutmeg.

Ingredients

  • 1 cup millet couscous (small granules)
  • 2 cups plain yogurt
  • 1/2 cup sugar or condensed milk
  • 1 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1/4 cup cream (optional)
  • 2 cups water
  • Pinch of salt

Instructions

  1. 1 Steam the millet couscous with 2 cups of water and a pinch of salt for 15 minutes until soft and fluffy.
  2. 2 Spread the cooked couscous on a tray to cool completely.
  3. 3 In a large bowl, whisk yogurt with sugar, vanilla, and nutmeg until smooth.
  4. 4 Fold the cooled millet couscous into the yogurt mixture, stirring gently to distribute evenly.
  5. 5 Add cream if desired for extra richness.
  6. 6 Refrigerate for at least 2 hours. Serve cold in glasses or bowls.
