Fried Plantain with Chili

Thick slices of ripe plantain deep-fried to golden perfection and served with a fiery chili-onion sauce, a beloved Burkinabe street snack.

Ingredients

  • 4 ripe plantains, peeled and sliced thick
  • Vegetable oil for frying
  • 2 onions, sliced into rings
  • 2 habanero peppers, sliced
  • 1 tbsp vinegar
  • Salt to taste

Instructions

  1. 1 Peel plantains and cut into thick diagonal slices.
  2. 2 Heat oil to 175°C in a deep pan.
  3. 3 Fry plantain slices in batches until deep golden on both sides, about 3-4 minutes per side.
  4. 4 Drain on paper towels.
  5. 5 Mix sliced onions, habanero, vinegar, and salt to make the accompaniment sauce.
  6. 6 Serve hot plantains topped with the onion-chili mixture.
