A quick summer skillet dish of diced peppers, ripe tomatoes, and white cheese scrambled with eggs until just set. A vibrant, colorful Bulgarian breakfast or light meal.

Ingredients

  • 3 large eggs
  • 2 roasted red peppers, diced
  • 2 ripe tomatoes, diced
  • 150g sirene cheese, crumbled
  • 1 tbsp butter
  • Salt and black pepper
  • Fresh parsley

Instructions

  1. 1 Melt butter in a skillet over medium heat. Add diced roasted peppers and cook for 2 minutes until heated through.
  2. 2 Add diced tomatoes and cook for another 2-3 minutes until they soften and release their juices.
  3. 3 Crumble sirene cheese over the vegetables and stir to begin melting.
  4. 4 Beat eggs lightly and pour over the pepper-tomato-cheese mixture. Stir gently with a wooden spoon, folding rather than scrambling.
  5. 5 Cook until the eggs are just set but still creamy and moist, about 2 minutes. Remove from heat immediately as residual heat will continue cooking.
  6. 6 Season with pepper, garnish with fresh parsley, and serve immediately from the skillet with crusty bread.
