Ingredients
4 beef kebapcheta (seasoned beef sausages)
4 beef and lamb kyufteta (meatballs)
8 chicken wings, marinated
2 beef steaks (200g each)
4 roasted red peppers
Salt, pepper, cumin
Sunflower oil
Lyutenitsa for serving
French fries for serving
Instructions
1Prepare kebapcheta and kyufteta mixtures as per their individual recipes. Shape and set aside on a tray.
2Marinate chicken wings with salt, pepper, paprika, and a little oil for at least 1 hour.
3Season beef steaks generously with salt, pepper, and a touch of cumin.
4Build a hot charcoal fire and let it burn down to glowing embers with white ash. The grill should be very hot.
5Grill each meat type to its ideal doneness: kebapcheta and kyufteta 4 minutes per side, chicken wings 6-7 minutes per side, steaks 3-4 minutes per side for medium.
6Arrange all grilled meats on a large platter with roasted peppers, fries, and lyutenitsa. Serve family-style with bread and beer.
