A bright, chunky relish of finely diced tomatoes, onions, and bell peppers dressed in vinegar and olive oil with fresh cilantro — the essential fresh condiment that crowns every Brazilian churrasco.

Ingredients

  • 4 medium tomatoes, finely diced
  • 1 large onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 bunch cilantro, finely chopped
  • 4 tbsp white wine vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. 1 Dice tomatoes, onion, and bell pepper into small, uniform pieces about 5mm.
  2. 2 Combine all diced vegetables in a mixing bowl.
  3. 3 Add chopped cilantro, vinegar, and olive oil. Season with salt and pepper.
  4. 4 Toss gently to combine. Let rest for 10 minutes to allow flavors to meld.
