Ingredients

  • 1kg mixed beef intestines and tripe, thoroughly cleaned
  • 1 large onion, quartered
  • 2 bay leaves
  • 1 tbsp salt
  • Water to cover
  • 1 tsp black pepper

Instructions

  1. 1 Thoroughly clean intestines and tripe, washing multiple times with salt and lemon.
  2. 2 Cut into manageable pieces and place in a large pot with water.
  3. 3 Add onion, bay leaves, salt, and pepper.
  4. 4 Bring to a boil, then reduce heat and simmer 3-4 hours until very tender.
  5. 5 Drain, cut into bite-sized pieces, and serve warm.
