Puffy, golden fried dough balls sold at street stalls across Botswana, eaten plain or stuffed with atchar or mince.

Ingredients

  • 4 cups flour
  • 1 packet instant yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 1.5 cups warm water
  • Oil for deep frying

Instructions

  1. 1 Mix flour, yeast, sugar, and salt. Add warm water and knead into a soft dough.
  2. 2 Cover and let rise 40 minutes until doubled.
  3. 3 Heat oil to 170°C. Pinch off balls of dough.
  4. 4 Fry in batches until puffed and golden, about 3 minutes per side.
  5. 5 Drain on paper towels and serve warm.
