A vibrant, spicy relish of baked beans, peppers, carrots, and tomatoes seasoned with curry — the essential braai and pap accompaniment.

Ingredients

  • 1 can baked beans
  • 2 carrots, grated
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 2 tomatoes, chopped
  • 1 large onion, chopped
  • 2 tbsp curry powder
  • 1 tbsp oil
  • 1 green chilli, chopped
  • Salt to taste

Instructions

  1. 1 Heat oil in a pot, sauté onion until translucent.
  2. 2 Add peppers and carrots. Cook 5 minutes.
  3. 3 Add tomatoes, curry powder, and chilli. Stir and cook 5 minutes.
  4. 4 Add baked beans, stir gently, and simmer 10 minutes.
  5. 5 Season with salt. Serve warm or at room temperature.
