Beef, chicken, or lamb grilled over wood or charcoal fire — the quintessential Botswanan social gathering centrepiece.

Ingredients

  • 1kg beef steaks or chops
  • 500g chicken pieces
  • Marinade: 3 tbsp oil, 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder
  • Salt and pepper to taste
  • Lemon juice

Instructions

  1. 1 Marinate meat with oil, spices, and lemon juice for at least 30 minutes.
  2. 2 Light charcoal or wood fire and let it burn down to glowing coals.
  3. 3 Place meat on the grill. Cook beef steaks 5-7 minutes per side for medium.
  4. 4 Cook chicken pieces 15-20 minutes, turning regularly until cooked through.
  5. 5 Rest meat for 5 minutes before serving.
