Cheese Phyllo Pie

Coiled phyllo pastry filled with a rich mixture of fresh cottage cheese and feta, baked until gloriously golden and flaky.

Ingredients

  • 400g flour
  • 200ml warm water
  • Salt
  • 300g cottage cheese
  • 200g feta cheese, crumbled
  • 2 eggs
  • 100ml vegetable oil

Instructions

  1. 1 Make dough: mix flour, water, salt. Knead until smooth. Divide into 8 balls, rest 30 min.
  2. 2 Mix cottage cheese, feta, and 1 egg.
  3. 3 Stretch each dough ball very thin on a floured surface.
  4. 4 Brush with oil, spread cheese filling, roll into a rope.
  5. 5 Coil into oiled round pan.
  6. 6 Brush with beaten egg and oil. Bake at 190C for 35 min until golden. Rest 10 min.
