Buckwheat Noodles

Hand-pressed buckwheat noodles with a satisfying chew, tossed in butter with chili flakes and served alongside egg or cheese as a hearty Bumthang meal.

Ingredients

  • 3 cups buckwheat flour
  • 1 cup water
  • 1 tsp salt
  • 3 tbsp butter
  • 1 tsp chili flakes
  • 4 eggs, fried (optional)
  • Ezay for serving

Instructions

  1. 1 Mix buckwheat flour, water, and salt into a firm dough. Knead for 10 minutes.
  2. 2 Rest dough covered for 15 minutes.
  3. 3 Press through a noodle press or roll thin and cut into noodle strips.
  4. 4 Boil noodles in salted water for 3-4 minutes until tender but firm.
  5. 5 Drain and toss immediately with butter and chili flakes.
  6. 6 Serve topped with a fried egg and ezay on the side.
