Savory beef sausages seasoned with garlic, ginger, Sichuan pepper, and dried chilies, a beloved Bhutanese street food and festival treat.

Ingredients

  • 500g ground beef
  • 4 cloves garlic, minced
  • 2 tbsp ginger, grated
  • 1 tsp Sichuan pepper, ground
  • 4 dried red chilies, crushed
  • 1 small onion, finely minced
  • 2 green onions, chopped
  • 1 tbsp soy sauce
  • 1 tsp salt
  • Natural casings or aluminum foil

Instructions

  1. 1 Mix ground beef with garlic, ginger, Sichuan pepper, crushed chilies, onion, green onions, soy sauce, and salt.
  2. 2 Knead the mixture until well combined and slightly sticky.
  3. 3 Stuff into natural casings or shape into sausage rolls and wrap in foil.
  4. 4 If using casings, twist into 10cm links.
  5. 5 Grill over medium heat for 10-12 minutes, turning frequently, until cooked through.
  6. 6 Serve hot with ezay and red rice.
