Instructions

    Mix ground beef with garlic, ginger, Sichuan pepper, crushed chilies, onion, green onions, soy sauce, and salt.

    Knead the mixture until well combined and slightly sticky.

    Stuff into natural casings or shape into sausage rolls and wrap in foil.

    If using casings, twist into 10cm links.

    Grill over medium heat for 10-12 minutes, turning frequently, until cooked through.
