Ingredients
2 cups raw cashews
3 tomatoes blended
1 onion chopped
2 tbsp vegetable oil
1 scotch bonnet pepper
2 cloves garlic
salt to taste
2 cups water
Instructions
1Dry roast cashews in a pan until golden, then grind to a fine powder.
2Heat oil, saute onion and garlic until translucent.
3Add blended tomatoes and cook for 10 minutes.
4Stir in ground cashew powder and water, mix until smooth.
5Simmer on low for 25 minutes, stirring often, until sauce is thick and creamy.
