Ingredients
1 whole chicken cut into pieces
2 inch ginger grated
6 cloves garlic minced
2 scotch bonnet peppers
3 lemons juiced
3 tbsp vegetable oil
1 onion grated
salt to taste
1 tsp ground white pepper
Instructions
1Blend ginger, garlic, scotch bonnet, onion, and lemon juice into a paste.
2Rub paste all over chicken pieces, marinate for minimum 4 hours or overnight.
3Prepare charcoal grill to medium-high heat.
4Grill chicken pieces, turning frequently and basting with oil, for 30-40 minutes.
