Grated fermented cassava (gari) stir-fried with tomatoes, onions, peppers, eggs, and vegetables. A quick, satisfying one-pan meal popular with students and workers.
Ingredients
2 cups gari (fermented cassava granules)
3 tomatoes chopped
1 onion diced
1 red bell pepper diced
2 eggs
3 tbsp vegetable oil
salt to taste
1 scotch bonnet pepper diced
Instructions
1Soak gari in warm water for 5 minutes until slightly softened, drain excess water.
2Heat oil in a large skillet, saute onion and peppers until soft.
3Add chopped tomatoes and cook 5 minutes.
4Add softened gari and stir-fry for 5 minutes.
5Push gari to the sides, scramble eggs in the center, then mix everything together. Season with salt.
