Grated fermented cassava (gari) stir-fried with tomatoes, onions, peppers, eggs, and vegetables. A quick, satisfying one-pan meal popular with students and workers.

Ingredients

  • 2 cups gari (fermented cassava granules)
  • 3 tomatoes chopped
  • 1 onion diced
  • 1 red bell pepper diced
  • 2 eggs
  • 3 tbsp vegetable oil
  • salt to taste
  • 1 scotch bonnet pepper diced

Instructions

  1. 1 Soak gari in warm water for 5 minutes until slightly softened, drain excess water.
  2. 2 Heat oil in a large skillet, saute onion and peppers until soft.
  3. 3 Add chopped tomatoes and cook 5 minutes.
  4. 4 Add softened gari and stir-fry for 5 minutes.
  5. 5 Push gari to the sides, scramble eggs in the center, then mix everything together. Season with salt.
