Tender gibnut (paca) slow-stewed with recado spices, onions, and peppers. Belize's most famous wild game dish.

Ingredients

  • 2 lbs gibnut meat cut into pieces
  • 2 tbsp red recado paste
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 2 tbsp vinegar
  • 2 tbsp vegetable oil
  • 1 cup water
  • salt and black pepper to taste

Instructions

  1. 1 Season gibnut pieces with recado paste, vinegar, salt, and pepper.
  2. 2 Brown the meat in oil in a heavy pot.
  3. 3 Add onion, garlic, and bell pepper. Cook until softened.
  4. 4 Add water, cover, and stew on low heat for 1.5 hours until meat is very tender.
