Garifuna Fish and Plantain Stew

A Garifuna stew of fresh fish simmered with green plantains, okra, and coconut milk, flavored with fresh herbs.

Ingredients

  • 1 lb fresh snapper fillets
  • 2 green plantains sliced
  • 1 cup okra sliced
  • 1 can coconut milk
  • 1 onion diced
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 1 scotch bonnet pepper
  • juice of 1 lime
  • salt to taste

Instructions

  1. 1 Simmer sliced green plantains in coconut milk until starting to soften.
  2. 2 Add okra, onion, garlic, thyme, and whole scotch bonnet pepper.
  3. 3 Add fish fillets and lime juice. Cook gently for 15 minutes until fish flakes easily.
  4. 4 Season with salt and serve in deep bowls with plenty of broth.
