Crispy fried corn tortillas topped with refried beans, shredded cheese, and pickled onions. A beloved Belizean street snack.

Ingredients

  • 8 small corn tortillas
  • 1 cup refried red beans
  • 1 cup shredded cheddar cheese
  • 1 small onion thinly sliced
  • 2 tbsp white vinegar
  • vegetable oil for frying
  • hot sauce to taste

Instructions

  1. 1 Pickle the sliced onion in vinegar for 15 minutes.
  2. 2 Fry tortillas in hot oil until crispy. Drain on paper towels.
  3. 3 Spread a spoonful of warm refried beans on each tortilla.
  4. 4 Top with shredded cheese and pickled onions. Serve immediately.
