Sweet steamed corn cakes wrapped in corn husks, made with fresh corn, coconut milk, and spices.

Ingredients

  • 6 ears fresh corn grated
  • 1/2 cup coconut milk
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • corn husks for wrapping
  • pinch of salt

Instructions

  1. 1 Grate fresh corn to extract the pulp.
  2. 2 Mix corn pulp with coconut milk, sugar, cinnamon, nutmeg, vanilla, and salt.
  3. 3 Spoon mixture onto corn husks and fold into parcels, tying with strips of husk.
  4. 4 Steam for 45 minutes until firm. Serve warm or at room temperature.
