Cassava Pudding

Garifuna Cassava Cake

A dense, sweet Garifuna cake made from grated cassava, coconut milk, and spices, baked until golden brown.

Ingredients

  • 2 lbs cassava peeled and grated
  • 1 can coconut milk
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup butter melted
  • pinch of salt

Instructions

  1. 1 Grate the cassava finely and squeeze out excess moisture.
  2. 2 Mix cassava with coconut milk, sugar, vanilla, cinnamon, nutmeg, butter, and salt.
  3. 3 Pour into a greased baking dish and smooth the top.
  4. 4 Bake at 350F for 1 hour until golden brown and set. Cool before slicing.
