The Story Behind Cassava Pudding
Cassava pudding represents the Garifuna people's deep connection to cassava, which was the staple crop of the indigenous Arawak communities from whom the Garifuna partially descend. The addition of coconut milk reflects Caribbean island influences, while the baking technique shows European adaptation. This dessert is one of the most important ceremonial foods in Garifuna culture.
