A hearty one-pot Creole dish of boiled eggs, fish, cassava, yams, plantains, and sweet potatoes in coconut broth.

Ingredients

  • 1 lb salted fish soaked overnight
  • 2 eggs
  • 1 cassava peeled and cut
  • 2 sweet potatoes peeled and cut
  • 2 ripe plantains
  • 1 yam peeled and cut
  • 1 can coconut milk
  • 2 cloves garlic
  • 1 onion
  • salt and pepper to taste

Instructions

  1. 1 Boil cassava, sweet potato, yam, and plantains in salted water until tender.
  2. 2 In a separate pot, simmer soaked salted fish with coconut milk, garlic, and onion.
  3. 3 Hard-boil the eggs. Peel and halve.
  4. 4 Arrange all components on a large platter and pour coconut sauce over everything.
