Crispy cubes of boiled potato coated in flour and egg, fried until golden, and served with sour cream. A beloved Belarusian street snack.

Ingredients

  • 800g potatoes, boiled and cooled
  • 2 eggs, beaten
  • 100g flour
  • Salt and pepper
  • Vegetable oil for frying
  • Sour cream for serving

Instructions

  1. 1 Cut boiled potatoes into 2cm cubes.
  2. 2 Season flour with salt and pepper.
  3. 3 Dip potato cubes in beaten egg, then coat in seasoned flour.
  4. 4 Fry in hot oil until golden and crispy on all sides.
  5. 5 Drain on paper towels and serve hot with sour cream.

Tsibriki are sometimes called Belarusian French fries, though they predate the French version by centuries.
