Roast Beef

A whole piece of beef slow-roasted with root vegetables, garlic, and herbs until fork-tender, then sliced and served with pan juices.

Ingredients

  • 1.5kg beef roast (round or chuck)
  • 4 cloves garlic, slivered
  • 2 onions, quartered
  • 3 carrots, chunked
  • 3 potatoes, quartered
  • 2 tablespoons oil
  • 2 bay leaves
  • Salt and pepper
  • 500ml beef broth

Instructions

  1. 1 Preheat oven to 160C.
  2. 2 Stud the beef with garlic slivers, season generously.
  3. 3 Sear beef in hot oil on all sides until browned.
  4. 4 Place in a roasting pan with onions, carrots, and potatoes.
  5. 5 Add broth and bay leaves, cover tightly.
  6. 6 Roast for 3 hours until fork-tender. Rest 15 minutes before slicing.
