200g pearl barley, rinsed

2 potatoes, diced

1 carrot, diced

1 onion, diced

1 celery stalk, diced

1.5 liters vegetable broth

2 tablespoons butter

Fresh dill and parsley

Instructions

Soak barley in water for 1 hour, drain.

Saute onion, carrot, and celery in butter until softened.

Add barley and broth, bring to a boil.

Simmer 30 minutes, then add potatoes.
