Forest Mushroom Soup

A deeply flavored soup made from dried and fresh forest mushrooms, simmered with potatoes, onion, and dill in a clear broth.

Ingredients

  • 30g dried porcini mushrooms
  • 300g fresh mushrooms, sliced
  • 3 medium potatoes, diced
  • 1 onion, diced
  • 1 carrot, diced
  • 1.5 liters water
  • 2 tablespoons butter
  • Fresh dill
  • Salt and pepper
  • Sour cream for serving

Instructions

  1. 1 Soak dried porcini in warm water for 30 minutes, reserve soaking liquid.
  2. 2 Saute onion and carrot in butter until golden.
  3. 3 Add fresh and rehydrated mushrooms, cook 10 minutes.
  4. 4 Add potatoes, mushroom soaking liquid, and water.
  5. 5 Simmer 20 minutes until potatoes are tender.
  6. 6 Season and serve with sour cream and fresh dill.
