Paper-thin yeasted pancakes made from wheat flour, served rolled with sweet or savory fillings, a beloved Belarusian breakfast and snack.

Ingredients

  • 250g flour
  • 500ml milk
  • 2 eggs
  • 1 tablespoon sugar
  • Pinch of salt
  • 2 tablespoons melted butter
  • Butter for frying

Instructions

  1. 1 Whisk eggs with sugar and salt.
  2. 2 Add half the milk and all the flour, whisk until smooth.
  3. 3 Add remaining milk and melted butter, mix well. Rest 30 minutes.
  4. 4 Heat a non-stick pan with a thin layer of butter.
  5. 5 Pour a thin layer of batter, swirling to cover the pan.
  6. 6 Cook 1-2 minutes per side until golden. Stack and serve.
