A hearty baked potato casserole made from grated raw potatoes mixed with onion, egg, and butter, baked until golden-crusted with a creamy interior.

Ingredients

  • 1kg starchy potatoes, peeled
  • 1 large onion
  • 2 eggs
  • 3 tablespoons butter, melted
  • 1 teaspoon salt
  • 200ml sour cream for serving

Instructions

  1. 1 Preheat oven to 190C. Grease a deep baking dish with butter.
  2. 2 Grate potatoes and onion on a fine grater, squeeze out excess liquid.
  3. 3 Mix grated potato with eggs, melted butter, and salt.
  4. 4 Pour into the baking dish and smooth the top.
  5. 5 Bake for 60-70 minutes until the top is deeply golden and crispy.
  6. 6 Let rest 10 minutes, then serve with sour cream.
