Ingredients
2 tablespoons vegetable oil
2 onions, finely chopped
3 cloves garlic, minced
2 tablespoons curry powder
1 teaspoon chili flakes
3 carrots, grated
2 bell peppers, diced
4 tomatoes, chopped
1 can (400g) baked beans
Salt to taste
Instructions
1Heat oil in a large pan over medium heat
2Sauté onions and garlic until golden
3Add curry powder and chili flakes, stir for 1 minute
4Add carrots and peppers, cook for 5 minutes
5Add tomatoes and cook until soft
6Stir in baked beans
7Simmer for 15 minutes, stirring occasionally
8Season with salt and serve warm or at room temperature
