Fried Flying Fish in a Salt Bread Roll

Seasoned and breaded flying fish fillets fried until golden, served in a fresh salt bread roll with lettuce, tomato, and Bajan pepper sauce.

Ingredients

  • 4 flying fish fillets, deboned
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • Juice of 1 lime
  • 1 tsp Bajan seasoning
  • 2 salt bread rolls
  • Lettuce leaves
  • Tomato slices
  • Bajan pepper sauce
  • Vegetable oil for frying
  • Salt and pepper

Instructions

  1. 1 Season flying fish with lime juice, Bajan seasoning, salt, and pepper. Let sit for ten minutes.
  2. 2 Dip each fillet in beaten egg, then coat evenly in breadcrumbs.
  3. 3 Fry in hot oil for two to three minutes per side until golden brown and crispy.
  4. 4 Slice salt bread rolls and layer with lettuce, tomato, and fried fish fillets.
  5. 5 Top with generous drizzles of Bajan pepper sauce and serve immediately.
