Barbadian Rum Cocktail

The national cocktail of Barbados following the classic recipe: one of sour, two of sweet, three of strong, four of weak, with a dash of bitters and nutmeg.

Ingredients

  • 4 oz fresh lime juice (the sour)
  • 8 oz simple syrup (the sweet)
  • 12 oz Barbadian rum (the strong)
  • 16 oz water (the weak)
  • Angostura bitters
  • Freshly grated nutmeg
  • Ice
  • Lime slices for garnish

Instructions

  1. 1 Combine lime juice, simple syrup, rum, and water in a large pitcher.
  2. 2 Add several dashes of Angostura bitters and stir well to combine all ingredients.
  3. 3 Fill glasses with ice and pour the punch over, leaving room at the top.
  4. 4 Grate fresh nutmeg generously over each glass.
  5. 5 Garnish with lime slices and serve immediately while cold.
