Bajan Fried Chicken

Chicken marinated overnight in Bajan seasoning, coated in seasoned flour, and deep-fried until golden and incredibly juicy.

Ingredients

  • 1.5kg chicken pieces, bone-in
  • 3 tbsp Bajan seasoning
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • Vegetable oil for deep frying
  • Juice of 1 lime

Instructions

  1. 1 Wash chicken with lime juice, then rub generously with Bajan seasoning. Cover and refrigerate overnight.
  2. 2 Mix flour with paprika, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. 3 Remove chicken from refrigerator thirty minutes before frying to bring to room temperature.
  4. 4 Dredge each piece thoroughly in seasoned flour, pressing to adhere. Shake off excess.
  5. 5 Fry in 170C oil for twelve to fifteen minutes until golden brown and cooked through, turning once.
  6. 6 Rest on a wire rack for five minutes before serving to keep the coating crispy.
