A tangy, peppery broth with chicken, onions, celery, and potatoes in a lime-forward soup. A Bahamian cure-all.
Ingredients

1 whole chicken, cut into pieces

6 limes, juiced

2 onions, sliced

3 celery stalks, chopped

2 potatoes, cubed

1 carrot, sliced

2 whole allspice berries

1 Scotch bonnet pepper, whole

6 cups water

Salt and pepper to taste
Instructions

Wash chicken pieces with lime juice and water. Drain.

Place chicken in a large pot with 6 cups water. Bring to a boil.

Skim any foam from the surface. Add allspice berries.

Add onions, celery, potatoes, and carrot. Simmer 30 minutes.

Add remaining lime juice and whole Scotch bonnet.

Simmer another 10 minutes. Season with salt and pepper.

Serve hot in deep bowls with the broth and vegetables.
