Bahamian Lime Broth with Chicken

A tangy, peppery broth with chicken, onions, celery, and potatoes in a lime-forward soup. A Bahamian cure-all.

Ingredients

  • 1 whole chicken, cut into pieces
  • 6 limes, juiced
  • 2 onions, sliced
  • 3 celery stalks, chopped
  • 2 potatoes, cubed
  • 1 carrot, sliced
  • 2 whole allspice berries
  • 1 Scotch bonnet pepper, whole
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. 1 Wash chicken pieces with lime juice and water. Drain.
  2. 2 Place chicken in a large pot with 6 cups water. Bring to a boil.
  3. 3 Skim any foam from the surface. Add allspice berries.
  4. 4 Add onions, celery, potatoes, and carrot. Simmer 30 minutes.
  5. 5 Add remaining lime juice and whole Scotch bonnet.
  6. 6 Simmer another 10 minutes. Season with salt and pepper.
  7. 7 Serve hot in deep bowls with the broth and vegetables.
