Bahamian Rum-Soaked Cake

A dense, moist butter cake soaked in dark Bahamian rum glaze. A boozy island indulgence.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup butter, softened
  • 4 eggs
  • 1/2 cup milk
  • 1/3 cup dark rum
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Glaze: 1/2 cup butter
  • Glaze: 1 cup sugar
  • Glaze: 1/4 cup water
  • Glaze: 1/2 cup dark rum

Instructions

  1. 1 Preheat oven to 165C. Grease and flour a bundt pan.
  2. 2 Cream butter and sugar until light and fluffy.
  3. 3 Add eggs one at a time, beating well after each.
  4. 4 Combine flour and baking powder. Add to batter alternating with milk.
  5. 5 Stir in rum and vanilla. Pour into prepared pan.
  6. 6 Bake 55-60 minutes until a toothpick comes out clean.
  7. 7 For glaze, melt butter in a saucepan. Add sugar and water. Boil 5 minutes.
  8. 8 Remove from heat, stir in rum. Poke holes in warm cake and pour glaze over.
  9. 9 Let cake absorb glaze for 30 minutes before unmolding.
