A moist, spiced quick bread made with sweet potatoes, coconut, and warm spices. A beloved Bahamian comfort bake.

Ingredients

  • 3 cups mashed sweet potato
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup coconut milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 cup grated coconut

Instructions

  1. 1 Preheat oven to 175C. Grease a loaf pan.
  2. 2 Combine mashed sweet potato with melted butter and sugar.
  3. 3 Beat in eggs, coconut milk, and vanilla.
  4. 4 Mix flour, baking powder, cinnamon, and nutmeg. Add to wet ingredients.
  5. 5 Fold in grated coconut.
  6. 6 Pour batter into prepared pan.
  7. 7 Bake 60-70 minutes until a toothpick comes out clean.
  8. 8 Cool in pan 10 minutes before unmolding.
