Golden, slightly sweet fried bread with a tender crumb. A beloved Bahamian accompaniment to stew fish and other dishes.

Ingredients

  • 3 cups all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp butter, cold and cubed
  • 3/4 cup milk
  • Vegetable oil for frying

Instructions

  1. 1 Combine flour, sugar, baking powder, and salt in a bowl.
  2. 2 Cut in cold butter using fingertips until mixture resembles coarse crumbs.
  3. 3 Add milk gradually, mixing until a soft dough forms.
  4. 4 Knead lightly on a floured surface for 2 minutes.
  5. 5 Shape into a round loaf about 2cm thick.
  6. 6 Heat oil in a skillet. Fry johnny cake on medium heat until golden brown on each side, about 5 minutes per side.
  7. 7 Drain on paper towels. Slice and serve warm.
