A hearty Bahamian breakfast of seasoned corned beef simmered with tomatoes, peppers, and onions, served over creamy grits.

Ingredients

  • 1 can corned beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tbsp vegetable oil
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 cup grits
  • 3 cups water
  • 1 tbsp butter

Instructions

  1. 1 Heat oil in a skillet. Saute onion and pepper until softened.
  2. 2 Add tomatoes and tomato paste. Cook 3 minutes.
  3. 3 Break corned beef into the skillet. Stir to combine.
  4. 4 Add thyme, salt, and pepper. Simmer 10 minutes.
  5. 5 Meanwhile, bring water to a boil. Stir in grits.
  6. 6 Cook grits on low 15 minutes, stirring often. Add butter.
  7. 7 Serve corned beef mixture over hot grits.
