Ingredients

  • 4 spiny lobster tails, cooked and diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 small red onion, finely diced
  • 2 limes, juiced
  • 1 orange, juiced
  • 1 Scotch bonnet pepper, minced
  • 2 tbsp olive oil
  • Salt to taste
  • Fresh cilantro, chopped

Instructions

  1. 1 Dice cooked lobster tails into bite-sized pieces.
  2. 2 Combine lobster with cucumber, bell pepper, and onion in a bowl.
  3. 3 Whisk together lime juice, orange juice, olive oil, and minced Scotch bonnet.
  4. 4 Pour dressing over salad and toss gently.
  5. 5 Season with salt. Garnish with fresh cilantro.
  6. 6 Refrigerate 15 minutes before serving.
