Bahamian Coconut Custard Tart

A sweet tart filled with caramelized coconut custard in a buttery pastry shell. A classic Bahamian bakery treat.

Ingredients

  • Crust: 2 cups flour
  • Crust: 1/2 cup butter, cold
  • Crust: 3 tbsp sugar
  • Crust: 1 egg
  • Crust: 2 tbsp cold water
  • Filling: 2 cups grated fresh coconut
  • Filling: 1 cup sugar
  • Filling: 2 eggs
  • Filling: 1/2 cup coconut milk
  • Filling: 1 tsp vanilla
  • Filling: 1/4 tsp nutmeg

Instructions

  1. 1 Make crust by cutting butter into flour and sugar until crumbly. Bind with egg and water.
  2. 2 Press crust into a tart pan. Refrigerate 20 minutes.
  3. 3 Preheat oven to 175C.
  4. 4 Caramelize sugar in a saucepan until amber. Add grated coconut and stir to coat.
  5. 5 Beat eggs with coconut milk, vanilla, and nutmeg.
  6. 6 Combine with coconut mixture. Pour into tart shell.
  7. 7 Bake 35-40 minutes until filling is set and golden.
