Rich, custardy baked macaroni and cheese made with evaporated milk, eggs, and sharp cheddar. A Bahamian celebration essential.

Ingredients

  • 500g elbow macaroni
  • 3 cups sharp cheddar cheese, grated
  • 1 can evaporated milk
  • 2 eggs, beaten
  • 2 tbsp butter
  • 1 tbsp yellow mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. 1 Cook macaroni according to package directions. Drain well.
  2. 2 Preheat oven to 180C.
  3. 3 In a large bowl, combine cooked macaroni with 2 cups of cheese.
  4. 4 Whisk together evaporated milk, eggs, mustard, salt, and pepper.
  5. 5 Pour milk mixture over the macaroni. Stir to combine.
  6. 6 Transfer to a buttered baking dish. Top with remaining cheese and paprika.
  7. 7 Bake 35-40 minutes until golden brown and set in the center.
