Gutab with Pumpkin

Pumpkin-Stuffed Flatbread

Sweet and savory flatbread filled with spiced pumpkin puree, dry-cooked on a griddle and served with butter. The autumn version of Azerbaijan's beloved qutab family.

Ingredients

  • 300g all-purpose flour
  • 150ml warm water
  • Pinch of salt
  • 500g pumpkin, peeled and cubed
  • 1 onion, diced
  • 1 tablespoon butter
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Melted butter for serving

Instructions

  1. 1 Make dough with flour, salt, and water. Rest 20 minutes.
  2. 2 Boil pumpkin until soft, drain and mash.
  3. 3 Sauté onion in butter, add mashed pumpkin, cinnamon, salt, and pepper. Cool.
  4. 4 Divide dough into 8 balls, roll each thin.
  5. 5 Spread pumpkin filling on one half, fold over, press edges.
  6. 6 Cook on a dry hot griddle until golden on both sides.
  7. 7 Brush with melted butter and serve hot.

Did You Know?

Pumpkin qutab is the most popular autumn treat in Azerbaijan. Some cooks add pomegranate seeds to the filling for a burst of tartness that contrasts beautifully with the sweet pumpkin.
